Hearty Chicken Tomato Meat Sauce

Will and I try to eat as clean as possible, which means a lot of home cooking! This recipe is one of our favourites that I adapted from a recipe I tried once and completely forgot where I found it. I make it a little different every time based on what is in the fridge, but the basic ingredients always remain the same. I am so excited to share this yummy recipe for chicken tomato meat sauce with you! I have made it with ground turkey, beef, and chicken, and it has tasted great with each of them.sauce_meatI start by putting the meat into a pot and cooking on medium heat until browned. As I mentioned earlier, you can use beef, chicken or turkey for this recipe, and they all taste great! If you're using beef, there's no need to add oil to the pot beforehand, but with chicken and turkey, I find a splash of light olive oil does the trick and keeps the meat from sticking to the bottom of the pot.sauce_ingredientsWhile the meat is cooking, I prepare my vegetables so they're ready to add to the pot.sauce_vegeTo save time, I pre-cook the onions and mushrooms until soft, before adding to the meat.sauce_all I then add the remaining ingredients and cook on low-medium heat for 30-40 minutes, stirring occasionally. I prefer to serve over quinoa, but you can use any type of noodle or rice. Will even eats it plain if there's nothing left over! This recipe is packed full of protein and is a great choice if you're looking for a quick and clean recipe for a post-workout meal.

Hearty Meat Tomato Sauce

  • 1 package of turkey/chicken/beef
  • 1 red onion, chopped
  • 1 cup mushrooms, chopped
  • 1 red pepper, chopped
  • 1 carrot, grated
  • A mystery ingredient - i.e. anything else in your fridge that you want to add (when I made this recipe, Will chose to add beans)
  • 1/2 tin of tomato paste, dissolved in 1 cup of warm water
  • 1/2 large tin of fire-roasted tomatoes (I use the President's Choice brand with basil)
  • 1 tsp garlic powder
  • 1 tsp onion power
  • 1 tsp your favourite seasoning (oregano, Italian spices, etc.)
  • 1 pinch of salt (optional)

Cook meat on medium heat in a sauce pot until brown. Add onions and mushrooms to the pot and cook until tender. (If you're in a rush, you can cook these separately while the meat cooks and add them with the remaining ingredients.) Add the remaining ingredients and cook on low-medium heat for 30-40 minutes, stirring occasionally. This can also be done in a crock pot, and is best served over quinoa. Enjoy!sauce_done
